This serves one.
1 Organic Chicken thigh – flatten it out as much as you can and stuff with:
2 or 3 prunes
1 or 2 slices of mozzarella cheese
4-6 Baby spinach leaves
Fold over and secure with toothpicks.
Spray lightly with oil, pinch of salt and pepper.
Bake in oven at 180C for 30 mins or in a rush at 200C for 20 mins. But make sure it's cooked right through. I prefer 30 minutes to be safe.
Serve with your choice of steamed vegetables.
